I picked 36 lbs of strawberries with the Dominic and the kids in Fort Langley last weekend! Oops. I discovered the challenge is not in the picking but in the processing!
I made delicious strawberry jam (after 2 attempts – it did not set the first time), froze lots of strawberries and Doug gave me this great recipe for strawberry salsa!
- 2 cups fresh diced strawberries
- 1/4 cup diced red onions of shallots
- 1/4 cup lime juice
- 2 TBSP lime zest
- Pinch of kosher salt & black pepper
- Dash of hot sauce
- Place all ingredients in a large mixing bowl, and toss to combine. Cover and refrigerate for 2 hours. Mix in 2 diced avocado. Serve with fresh fish or grilled chicken
